Skinny Southwest Dip

a delicious dip filled with spices, cheeses, corn, and black beans. Perfect for snack time and even more perfect for any party!

Ingredients

  • 2 cups nonfat greek yogurt i use fage 0%
  • 8 ounces light cream cheese
  • 1 packet taco seasoning low sodium, if available
  • 1 packet ranch salad dressing & seasoning mix i use hidden valley
  • 1 15 oz can black beans rinsed and drained, VERY well
  • 1 15 oz can whole kernel corn drained
  • 3/4 cup reduced fat shredded Mexican cheese i use Sargento
  • 1/8 tsp cayenne pepper use more or less depending on your level of spice preference

Instructions

  1. With a mixer, combine greek yogurt, cream cheese, taco seasoning, ranch seasoning, and cayenne pepper. Mix until combined well. 

  2. Gently fold corn, black beans, and shredded cheese into the mixture until combined well. 

  3. Cover and refrigerate for at least 30 minutes before serving. 

  4. (Optional) Garnish with freshly chopped tomatoes, cilantro, onions, jalapeños, etc. It's not needed, but it makes it a bit more presentable for a party!
