Crockpot Creamy White Chicken Chili

What’s for dinner this week? Well, not to sound pushy, but it should probably be this. This stuff is incredible and it’s one of the easiest recipes I’ve ever made. You literally throw a bunch of stuff in the crockpot wait several hours, throw a couple more things in, and then, you are GOLDEN! You probably have most of these ingredients on hand already. I’m quite literally obsessed with this recipe. I’ve made it every single week since I started working on the recipe for this here blog, and I cannot get tired of it. I know you’re probably wondering, “Star, is everything going to have beans in it now?” The answer is No. Haha! But, since the new Weight Watchers Freestyle program makes beans zero points AND I’ve only liked beans for about six months now. It’s really opened up a whole new world for me, y’all! I know it’s not that exciting for most people, but for me it is! I’m sitting here eating a delicious chili WITH beans in it and I am obsessed. Who am I?! Me one year ago would be scrunching my nose up and saying, “No way!” I’m pretty proud of myself for giving them another chance. I stick to my guns when I don’t like certain foods. I’m pretty stubborn about it, to be honest. I wouldn’t consider myself picky in the least, but I like what I like. I still don’t like mushrooms so don’t worry, I’m still the same person.

What’s been going on this week for us? Well, I’ve been fighting a stupid cold. It’s been pretty persistent. I’ve been chugging all the water and eating approximately 300 Cara Cara oranges daily to combat this thing. I’ve kept it at bay, but it’s still here just enough to annoy me. Oh, and then Eric caught this persistent lil’ baby cold and well, we all know what happens when a man gets a cold. He’s practically dying, y’all. Send prayers. (He’s not. He’s FINE.)  This chili has been on the menu daily because not only is it chili and we love chili and/or soup when we don’t feel well, but it’s packed with so much dang flavor that we can actually still taste it! I truly think that’s the most annoying part about a cold. You just can’t taste a thing! Which also makes my job hard. I haven’t been able to really work on any new recipes this week because I can’t taste them enough. Oh well, it’ll be gone soon!

Another really fun thing that happened this past week is that I went LIVE on Instagram with a fellow Weight Watchers Ambassador, blogger, and friend! Amy over at Beautifully Broken Journey. She’s such an inspiring woman and I just really like her. You will too! Go check out her blog.  I never go live because truthfully, I feel that I do better behind the camera. It was fun and we got to chat together, talk about our weight loss journey’s, different tips & tricks, and talked to so many people! I was dreading it in ways, but I’m really glad I stepped out of my comfort zone and did it. I think it’s important to challenge myself so that things don’t become stagnant, ya know? Anyway, I’ve been thinking that maybe I’ll do it again sometime and with better lighting (gosh, I had no idea the lighting was so bad. If you saw it, I’m sorry! haha!) I’ll be sure to let y’all know!

Anyway, enough talk. Let’s get in the kitchen because I’m hungry and you’re going to be hungry after you see this.

Throw some spices together. You’ll need 2 tsp cumin, 2 tsp garlic powder, 2 tsp onion powder, 2 tsp chili powder, 1 tsp kosher salt, 1 tsp pepper, 1 tsp Lawry’s Seasoned Salt, and 1/4-1/2 tsp cayenne pepper. (More or less depending on your level of spice preference. I prefer more especially with this cold I’ve got, but 1/4 tsp is a perfect balance of heat to me!)

Throw a couple pounds of raw chicken breast in a slow cooker.

Add 2 cans of Great Northern Beans, 2 cans diced mild green chiles, 2 1/2 cups frozen corn, and the spices!

Then add 1 3/4 cups chicken broth. (low sodium if it’s available!)

Stir it up, cover it, set it to low, and forget about it for several hours! Go to work, go get your hair done, clean your house, take your kids to soccer practice, whatever ya want! Dinner will be ready later! We’ve got it covered.

Remove the chicken and shred it.

I just throw it in a bowl and quickly shred with two forks. You can also use a mixer!

Add it back into the slow cooker and stir in with everything else.

Grab 4 ounces of light cream cheese.

Throw it in the slow cooker and also pour a half cup of half and half with it. Stir it up. Pop the cover back on and set your slow cooker to high and cook for another 30 minutes. D

aaaaaand then it’s done.

and it’s delicious.  (squeeze some lime on it to make it even beeetttaaa)

so delicious.

You can take the soup to the next level by adding tortilla strips, shredded cheese, cilantro, green onions, but you don’t have to. It’s delicious by itself.

But, I’m the kinda gal that likes to go big or go home with my food.

I even added some tomatoes because why not at this point?  Oh my gosh, Did I mention this is delicious!? Make it RIGHT NOW.

A slow cooked white chicken chili packed with flavor and finished off with creaminess.

Ingredients

  • 2 lbs chicken breast, raw
  • 2 15.5 ounce cans Great Northen Beans drained
  • 2 4 oz cans diced mild green chiles
  • 2 1/2 cups corn, frozen
  • 1 3/4 cups chicken broth low sodium, if available
  • 2 tsp cumin
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 2 tsp chili powder
  • 1 tsp kosher salt
  • 1 tsp Lawry's Seasoned Salt
  • 1 tsp pepper
  • 1/4 tsp cayenne pepper more or less depending on level of spice preference
  • 1/2 cup half and half
  • 4 oz light cream cheese

Optional toppings

  • tortilla strips
  • reduced fat shredded cheese
  • chopped green onions
  • chopped cilantro
  • diced tomatoes
  • a squeeze of 1/4 of a lime

Instructions

  1. In a slow cooker add chicken breast, beans, green chiles, corn, spices, and chicken broth. Cover and cook on low for 7-8 hours or high for 5 hours. 

  2. Remove chicken and shred. Stir back into the chili. Stir in half and half and light cream cheese. Cook on high for 30 minutes. 

  3. Top with tortilla strips, cheese, green onions, cilantro, tomatoes, and/or a squeeze of lime, if desired. Enjoy!

    • Hi there! I’m sorry I don’t have an Instant Pot so I don’t have that info handy. I’m sorry! I’m almost positive it could be though.

    • I just did this evening. I did manual for 25. It worked. Maybe didn’t have to do for that long. It was delicious!

    • I think you could. I have a Instant Pot and have made Pork and Homany Stew for 40 min then quick release then added the homany and shredded the pork. I’m going to try it in mine and see how it goes.

    • Yes! I would just add all the ingredients besides the half & half and cream cheese to slow cooker and cook for 1 hour together. Then add the cream cheese & half and half then cook for another 30 minutes. It might not be as flavorful as slow cooking the chicken in the spices for hours, but I bet it’ll still be yummy!

    • I save them, but I just do the points and servings and sometimes they don’t have the same name as on here. I don’t write any directions out or anything there. Sorry! You can always quick add item or input the items into the recipe builder and save it!

    • I haven’t really used greek yogurt as a thickener in soups yet. It should work though. Might not have the same taste though! Let me know if ya try it!

    • It should work, but it wouldn’t need 7-8 hours to cook. I’d mix everything together (except for cream cheese and half and half) and cook together for about an hour then add the cream cheese and half & half at the end for another 30 minutes. Should turn out good!

    • half and half is equal part mixture of milk and cream. You can find it in the dairy section in the grocery store. The points include the chili the optional toppings would be additional points

  35. Star this is HANDS DOWN my favorite recipe by you EVER. I thought my heart belonged to biscuit and gravy bake but I’ve legit had white chicken chili everyday for almost 2 weeks now and I CANT STOP. Send help, the addiction is real. Also, I made it in the instant pot and it was super fast and easy!

    As soon as I saw this recipe, I had to try it……but I didn’t have all the ingredients.
    So in went black beans, creamed corn and Rotel as replacements for white beans, frozen corn and green chilis. All the rest was the same.
    While I promise I’ll do it right next time, I have to say it was killer good! My brother in law was in town and he made me send the recipe to his wife ( I sent both versions.) She could not believe this was a Weight Watchers friendly recipe and enjoys your version a little more because of the zing of the green chiles.
    As I recall, my variated version may have added 1 extra point on Freestyle. I didn’t care. It was quite filling and enough for me, although I added jalapenos and other zero garnishes. But my husband and brother-in-law packed on the cheese and garnish and scarfed down tortilla chips with it, and had second helpings………Always great to find a recipe that fits into my WW lifestyle while still pleasing people not in the program.
    This will be a go-to meal quite often. THANKS and LOVE many of your recipes! FYI: I found you through the pages of WW Connect.

    • Did you add it via the nutritional info? The nutritional information includes all of the zero point items so it will come up higher in points. I hope you love it!

  49. I substituted light sour cream with skilled milk for the half and half and used fat free creamed cheese. I didn’t have green chiles so i substituted chopped red, orange and yellow baby peppers. I also used shredded rotisserie chicken and cooked it in a stockpot on the stove. Turned out GREAT and I will know it will be better tomorrow. Thanks so much!

  55. Hi! I’m a new follower. Let me just say, this recipe is AWESOME! I made a couple of modifications to mine…I didn’t have half & half, so I just used a full block of the FF cream cheese. And I only had one can of green chilies. At the end, I added about half a packet of ranch dressing mix and OH EM GEE. It’s delicious!!! My husband had NO idea that this was “light.” 🙂 Thanks!!

  63. I wanted to throw my two cents in just because there are other people asking about making this with pre-cooked chicken.
    I had an almost full Costco rotisserie chicken in the fridge that I needed to use up. And (luckily) all the ingredients in my pantry for this chili.
    I made this dish once before, exactly as written, in the crockpot. It was super yummy but I was a smidge disappointed in how “watery” it turned out. Not so this time! I don’t know if it’s using pre-cooked chicken (not as many juices released) or what, but man oh man… this batch turned out SO good!

    So, for any others wondering… yes! You can absolutely make this with pre-cooked chicken!

    I pulled the chicken off the bird and left it in pretty big chunks. I also added an additional 1/4 cup broth and put it all in a pot on the stove, except the half & half and cream cheese, like Star says. I cooked it on super low, covered, for about 2.5 hours and then added the last 2 ingredients. Let that go for another 30min – 1 hour and really give it a good stir to break up any large hunks of chicken. And then good luck not eating the whole dang pot!

    • Thanks for the info, Caprice! I have never had a problem with it turning out watery (yet), but it is true! Some chicken breasts can actually hold extra water than others. I don’t know the exact scientific explanation behind it, but I have heard it multiple times and never actually took that into consideration. I’m so happy this batch turned out a bit better for ya using the pre-cooked chicken!

  67. Oh. My. Word. This is AMAZING. I had another white chicken chili recipe I liked, but I’m never making it again. I mean, why would I make that when I could make this? I wouldn’t. My husband actually had some before I did and said, “This is REALLY good.” He’s a foodie, so that’s a big deal. I’ve shared it with a couple of friends. One of them made it already and her 5 kids were fighting over the leftovers and asked if she could make it again. I think the blend of spices what takes it over the top. Make this RIGHT NOW.   70. Hi There! So I made this today, and without realizing you posted the points value, created it within my ap. I am not sure if I used a different can of beans, green chili’s, bag of corn, or what, but I’m showing only 0 point for a cup.
    The only thing showing points is the cream cheese, and I used fat free.
    Just wanted to make sure I didn’t miss something, or if you were counting toppings.
    Big Hit in my house, by the way! And with the cold front coming in, I’ll be taking for lunch all week!

    • Hi Ashley! I do use light cream cheese and regular half and half. Did you use half & half? If not, I suppose it could for sure be zero points with just the fat free cream cheese! I’m so happy y’all enjoy it at your house!
