White Chicken Enchiladas

A few weeks ago I was cleaning out my pantry and I found a old recipe that was just a bunch of chicken scratch. I really used to be terrible at writing my recipes down. I pretty much wrote the name of the recipe and the ingredients, so that every time I made something the process was a little different.

I still do this sometimes, but since I love writing and sharing my recipes with you all, I’ve had to get better! Writing recipes is a labor of love. I’m a pretty ‘fly-by-the-seat-of-my-pants’ type of cook. When I started eating more healthy, it was an all new concept to start measuring. I realized, “Whoa! portions really do matter!” Since then, I always have my handy dandy scale and measuring cups on hand, but I’m still one to throw random ingredients into an old recipe all the time. I have never once been able to follow a recipe exactly, including my own.

I’m getting off track. Sorry, I do that a lot. You should try having a conversation with me sometimes… that might be why Eric scratches his head in confusion so often when I’m telling him stories.

Okay, here it is- White Chicken Enchiladas! The old recipe (from way back when) was like a million calories per enchilada. So I went in and lightened it up and I honestly think it ADDED MORE delicious flavor! And that’s huge to me- I hate giving up flavor in any way shape or form, and I refuse to do it to lose weight.

Oh yeah, 100% Farmer Approved. (Eric’s dad loved them too!)

So here’s what happened in the kitchen…


Gather up some ingredients!

(Not pictured: one of the most important parts- the chicken! apparently I wasn’t thinking straight, forgot to take a picture of it!)


In a bowl add in the sour cream, cream of chicken, cilantro, garlic powder, salt & pepper, and cilantro.


Stir it all up and set aside!


In a large skillet, lightly sprayed with cooking spray, add your onions and garlic and saute for a few minutes, until the onions look slightly transparent.


Add in those green chilies!


Next up, the chicken…


…and then some cilantro. Do y’all know how good cilantro is for you? Like insanely good. I always double up on the cilantro in recipes that call for it. If you love cilantro use more, if you’re not a huge fan use a little less- but don’t skip it! It really is perfect for this meal.


Now for some spice, chili powder! (again, a bit more or less depending on your love of spiciness.)


and some good old fashioned salt & pepper…


Now mix it all up in the pan, and cook for a few minutes longer…


…add a couple tablespoons of the sour cream mixture into the pan with your chicken, and mix it up together.


 Now grab your tortillas, divide up your chicken mixture into each one, and roll them up!


Take your baking dish and lightly spray it with some cooking spray. Then take a couple scoops of the sour cream/chicken soup mixture, and spread it on to the bottom of the dish.


Place all your enchiladas in the dish… almost there!


Spread the rest of the sour cream mixture on top…


Now for my favorite part: top with the cheese! (If you aren’t watching your weight- THE MORE THE MERRIER!)


and it’ll come out of the oven looking something like this…

And you can garnish it with some delicious toppings such as lettuce, more cilantro, salsa… I added some guacamole on mine too. So much yum!

White Chicken Enchiladas

  • 3 cups cooked shredded chicken breast rotisserie breast works great too!
  • 6 low carb tortillas I use Mission brand
  • 1 small onion chopped
  • 1 tbs minced garlic
  • 1-10 1/2 oz can 98% fat free cream of chicken soup
  • 1 small can of diced chiles
  • 3/4 cup nonfat sour cream
  • 3/4 cup reduced fat shredded mild cheddar or colby jack
  • about 1/2 cup fresh cilantro , more for garnishing
  • 1/2 tbs chili powder
  • 1 tbs garlic powder
  • Salt and pepper , to taste
  • cooking spray


  1. Preheat oven to 325 degrees.
  2. In a small bowl, mix together cream of chicken soup, sour cream, garlic powder, salt & pepper, and about half of the cilantro. Set aside.
  3. In a lightly sprayed skillet on medium-high heat, add your chopped onions and garlic, and sauté until your onions are slightly translucent (about 3 minutes). Add in your diced chilies, chicken, cilantro, chili powder, salt and pepper and cook for about five more minutes, stirring all together.
  4. Take a couple tablespoons of the sour cream mixture and add to the chicken. Stir and mix completely.
  5. Divide and scoop the chicken mixture evenly onto each tortilla.
  6. Roll the tortillas up and place seam side down in a lightly sprayed baking dish that has a tiny bit of the mixture spread on the bottom of dish.
  7. Top with shredded cheese and bake for 25 minutes.

    First – you left out an instruction in the recipe to pour the sour cream mixture over the tortillas. I assumed it but it should be in the recipe.

    Also – I refuse to used canned cream soup – fat free or no – so I mixed the ff sour cream with green verde salsa (much less calories!) and made a green sour cream sauce.

    Finally – you might also note whether the dish should be covered or not when it goes in the over. I covered and then uncovered at the last.

    Less pictures and more printed, straightforward instructions.

    • Hi Jodie! sorry about your confusion with the recipe. Also sorry you refuse to use canned soup! Feel free to do whatever you’d like to make it something you’d like to eat. I myself use canned soup here and there because I am a busy mama and I know there are others out there too! I like the creaminess of the soup WITH the sour cream! That’s why I have it in the recipe!   12. So I made these tonight….. Omg so delicious. My boyfriend loves them. He had 2 lol….I love the use of cream of chicken soup, the sauce was so good and creamy. Trying to figure out what else I can use cream of chicken soup for……. I only made 2 changes. I had some Greek yogurt that I needed to use so I replace the sour cream with it and I added a bell pepper just for more veggies. Can’t wait to make more of your recipes. Thanks

    • I’m so glad you liked them! Soon I’ll make one with a homemade cream sauce light on calories! It’s on my always growing list of recipes to put on the blog. sour cream/Greek yogurt works just fine, but you don’t get that extra creaminess that I personally love- so I’ll get one one here soon with a easier sauce from scratch 🙂

  13. I made this a couple days ago and they’re delicious! I don’t like cream of chicken, so I used cream of onion (no 98% FF version!) and it changed my points to 5pp per enchilada. I got way confused and added the green chiles and chili powder to my sour cream mixture, but it turned out fine. I guess I don’t read very well. 😛 At the end, I assumed I should pour the rest of the sour cream mixture on top of the enchiladas, but I think that is missing from the directions. Oh, and cilantro makes me gag, so I left it out. These were SOOO good and easy. I will be making again!!

    • I will double check the recipe tonight to make sure that it is clear. Every once and awhile I mess up writing a recipe so it may just be my fault! I’m so happy that you enjoyed the enchiladas.   24. Star, I just made the white chicken enchiladas and I loved them. I prepared my chicken in the crock pot using your recipe and they were so easy to shred. I actually goofed by adding the chili powder to the soup mixture, but I think they still came out wonderful. They were every bit as good as a restaurant. This is the first recipe of yours I tried since I just came across your Instagram page this week. Tomorrow I am trying the biscuits and gravy. I could not find Jennie-O breakfast turkey sausage in my area, but I did find a package of Jimmy Dean breakfast turkey sausage crumbles. I hope they work as well. Also, I find your pictures very helpful. Thank you for such a flavorful dish that is lower in calories. I am trying to get back on the right track to lose weight and I can’t wait to try some of your other recipes.

I used to use Mission brand tortillas/wraps, but I’ve discovered the brand Ole Extreme Wellness tortilla wraps and they are only 1 smart point/wrap. Now that depends on what sort of tortillas you use mostly. I use the Mission low carb tortillas, but if you’re using lower point tortillas they could definitely be 4 Points each!   35. Would I need to increase the oven time if I’m cooking two batches at once?

    • You shouldn’t need to since everything is fully cooked your kind of just heating up the sauce and melting the cheese. I hope you love it!
