Last Sunday Morning, I started the process of the most delicious pulled pork that there ever was. This pork roast is slow cooked for about 18 hours, and contains only three key ingredients. It is the most tender, juicy, salty, perfect pulled pork that I’ve ever had. This is not my original recipe, but I did change a couple things to make it a little more calorie friendly, such as using just a few slices of center-cut bacon in place of the regular bacon, and really trimming the fat off of the pork shoulder roast before it goes into the slow cooker.
I have never been to Hawaii, but I am told by my mama that it tastes identical to the pig that they roast in the ground there. So If you’ve ever been to the aloha state and would love a taste of nostalgia, here’s your chance! Also, if you have never been, then here’s your chance to taste some authentic-ish Kahlua Pork. I tried the paleo ways and I tried it for quite awhile. It was fun while it lasted, but bread. cheese. BREAD. They are life. That’s another reason I’ll probably always be such a fan of Weight Watchers. I can have my bread, and eat it too!
Now before you get excited and you want to make these delicious lightened up Cuban sandwiches for dinner tonight, keep in mind- if you are going the Kahlua pig route for the pulled pork part of the sandwich, you must start cooking the pork the day before. It needs 16-18 hours in the slow cooker for it to really be just right. It’s worth the wait, I PROMISE.
If you have another pork recipe you’d like to try that is quicker and/or you’re already more familiar with, that’s cool, It’s totally up to you. Keep in mind that for the Cuban sandwich to be as tasty as possible it requires a few key elements, one being some delicious tender pork.
So… After you’ve waited for precisely 18 hours, you can finally open up your crock pot. Peel a piece of this pulled pork right off the roast. Pop it in your mouth, close your eyes, and thank the stars above!
Lay your roast on a cutting board and shred it up. You’ll more than likely have some pieces of fat on there that you weren’t able to get cut off before it started cooking. So remove those as well as the few cooked bacon pieces. Shredding will be easy as pie as this is the most tender piece of meat that there ever was.
Now for your Lightened Up Cuban Sandwiches..
Gather up your ingredients! For four sandwiches you will need- Deli Ham, some thin provolone slices or Laughing Cow Swiss Cheese Wedges, Mayo, Dijon Mustard, Worcestershire, Dried Minced Onion, Thin Pickle Slices, and Some buns!
Mix up a spread with the mayonnaise, Worcestershire, Dijon mustard, and minced onion. This is my favorite mix to eat on many different sandwiches. I call it my Smokey Mayo! It adds dimension to any sort of sandwich.
Sauté your ham slices in the skillet. You don’t have to do this step, but I personally like when the whole sandwich is heated through nicely.
Add your pulled pork and do the same. If your pork is coming fresh out of the slow cooker, then you may also skip this step. You definitely want this part nice and warm!
Grab some buns! I used Healthy Life Wheat Sandwich Buns to keep my calories lower. You can really use any type of bread or sandwich bun that you’d like.
Divide your smokey mayo mix evenly and shmear it on those buns!
Now, it’s time to start stacking these sandwiches! First comes the pulled pork…
…then some slices of ham…
…and Provolone… (you can also use a wedge of laughing cow creamy Swiss, either way is delicious!)
…and of course, some dill pickles! (I was down to one last pickle for these photos- otherwise they would have been STACKED, because I LOVE pickles.)
LOOK AT THIS BEAUTIFUL SANDWICH… JUST LOOK AT IT! (Insert lots of hearts!)
You can use real butter or light butter (or like me some spray butter) to lightly spray your buns so they get a nice buttery taste when grilling in the pan!
Lightly spray your pan with some cooking spray. Set your sandwich butter-side-down first, and smash it!
Add butter to the other side of the bun.
Flip again, and grill until the buns are nicely browned, and the cheese is oozing out of the sides.
and Voila! You’ve got yourself a PERFECT Lightened-Up Cuban Sandwich. So delicious!
If you’re like me and you’re watching your calories (or points), you may not be able to eat all four of these sandwiches at once… Like I really, really wanted to.
You can wrap up the sandwiches in some tin foil, and just reheat them in the oven at 350 Degrees for about 15 minutes.
They taste even better the second day. The worst thing about these sandwiches is that Eric ate them all, and I only got two!

Cuban Sandwiches with Kahlua Pork
- 4 sandwich buns (I use Healthy Life Whole Wheat Buns)
- 8 oz Kahlua Pork
- 8 oz deli ham
- 4 slices ultra thin provolone or 4 wedges creamy Swiss laughing cow cheese
- 12 thin sliced pickles (Claussen are my go-to pickles)
- 4 tbs light mayo
- 3 tbs dijon mustard
- 2 tbs worshestire
- 1 tbs dried minced onion
- I can't believe it's not butter spray or light butter
In a small bowl, mix together mayo, dijon mustard, Worcestershire sauce, and dried minced onion. Set aside.
In a small skillet, heat up and brown your deli ham and pulled pork (this is totally optional).
Evenly divide and spread the mayo mixture onto the top and bottom of the buns.
On your bottom bun stack 2 oz of pork, 2 oz of ham, a slice of provolone cheese, and then your pickle. Close your sandwich, and spray the top with some butter spray, or brush with melted light butter.
In a lightly sprayed skillet, over medium heat, place your sandwich top-side down, and carefully press down with your hand to flatten out the sandwich.
Spray or brush with butter again on the bottom side of the bun, and continue to grill until the cheese is gooey and the bun is golden brown.
